Recipe: Brussels Sprout and Sweet Potato Israeli Couscous Salad

I’m one of those slightly odd people that still loves salads in winter, and this brussels sprout and sweet potato number is perfect for that! Plus, it has my forever favourite salad base – israeli couscous! Roasted veggies, nuts, cranberries – what more could you want!

I very slightly amended a recipe from Oh My Veggies

Ingredients List

  • 500g brussels sprouts
  • 2 medium sweet potatoes
  • 3tbs olive oil
  • Salt & pepper
  • 1 1/2 cups israeli couscous
  • 2 cups vegetable stock
  • 1/2 cup spring onion
  • 2/3 cup dried cranberries
  • 1/3 cup sliced almonds
  • 1/4 cup fresh parsley
  • 3tbs olive oil
  • 1 1/2tbs honey (or maple syrup)
  • 1tbs apple cider vinegar
  • 1 clove garlic, minced

Steps

  1. Preheat oven to 220C
  2. Halve the brussels sprouts and slice the sweet potato into chunks
  3. Toss with olive oil and salt and pepper, then spread onto a lined baking tray and roast for 20-25 minutes, tossing once
  4. Meanwhile, toast the couscous in the bottom of a saucepan until lightly golden then add the vegetable stock and simmer for 10 minutes, or until liquid is absorbed and the couscous is tender
  5. Remove from heat and add to a large bowl
  6. Once brussels sprouts and sweet potato have cooked add to the bowl with sliced spring onions, cranberries, almonds and roughly chopped parsley and toss to combine
  7. Combine remaining ingredients in a small jar and shake to combine, taste and season as required
  8. Drizzle dressing over salad and serve

I love the wintery flavours of this salad, and it’s definitely hearty enough to make a perfect work lunch. Plus of course I’ll always be happy with israeli couscous! Brussels sprouts and sweet potato make such a good combo – seriously this salad is a real winner!
