Recipe: Cheese Damper

I was after something delicious to serve with soup for a weekend lunch and this cheese damper was the perfect answer. Super simple to whip up, lots of flavour and ready in no time. It turned a simple lunch of soup to something extra warming and hearty. Plus, cheese!

I tweaked a recipe I found here

Ingredients List

  • 2 cups self raising flour
  • Salt
  • 80g unsalted butter, cold
  • 1/2 cup cheddar cheese
  • 100g feta
  • 1tbs caraway seeds
  • 1/4 cup chives
  • 2tbs dill
  • 3/4 cup milk plus 1tbs for brushing
  • 1/4 cup pepitas

Steps

  1. Preheat oven to 220C
  2. Sift flour with a pinch of salt. Chop the butter then rub into the flour with your fingertips until it looks like fine breadcrumbs
  3. Grate the cheddar then add to the flour mix with the crumbled feta, caraway seeds and finely chopped herbs, stir to combine
  4. Make a well in the centre and pour in the milk. Mix using a round-blade knife until a sticky dough forms
  5. Turn onto a lightly floured bench and knead until smooth. Shape into a 20cm round and place on a lined baking tray
  6. Using a sharp knife mark eight equal wedges on top, then brush with 1tbs milk and top with pepitas
  7. Bake for 20-25 mins, until the damper sounds hollow when tapped. Serve while still warm

This cheese damper is seriously that simple! It’s bready and cheesy and delicious on its own when served warm. I love that the whole thing takes not much more than 30 minutes and you have bread on the table. How good is that!

Making damper reminds me of primary school camps and cooking on the open fire, but this cheese damper is a much more flavour packed version! Plus, cooking it in the oven creates a lot less smoke – and is much more achievable in my apartment!
