Recipe: Cranberry, Almond & Choc Chip Slice

While I try and eat pretty healthy most of the time, sometimes I just need to whip up a baked good to have with a cup of tea, or to take to work to stave away the mid-afternoon energy slump. That was the impetus behind this cranberry, almond & choc chip slice and I was certainly happy with how it turned out! I think I’ll be making this one again soon!

Dried cranberries are one of my favourite things to use in baked goods (and salads!), I much prefer them to raisins. I think they go particularly well in heartier baked goods, and with the oats in this slice I thought they were the perfect flavour combo. The slice is super easy to make and it just takes one bowl, so the clean up is minimal as well (my kinda baking!).

Ingredients List

  • 1 cup oats
  • 1/2 cup self raising flour
  • 1/2 cup plain flour
  • 2tsp cinnamon
  • 2/3 cup desiccated coconut
  • 2/3 cup brown sugar
  • 1/2 cup dried cranberries
  • 1/2 cup flaked almonds
  • 1/2 cup choc chips
  • 2 eggs
  • 125g melted butter

Steps

  1. Preheat oven to 180C and line a baking tray with baking paper
  2. Stir together dry ingredients in a large bowl
  3. Lightly whisk the eggs and pour the eggs and melted butter into the bowl.
  4. Fold together until just combined and then spoon into the tray, spreading into the corners and using the spoon to smooth the surface
  5. Bake for 20 minutes until golden brown and firm to the touch
  6. Leave to cool slightly in the pan then cool completely on a wire rack.
  7. Slice and enjoy!

The slight chewiness of the oats makes these feel wholesome and even vaguely healthy, which is perfectly offset by the delicious bursts of sweetness from the cranberries and the chocolate. The slice would be a great lunchbox treat (leave out the almonds for any nut-free schools), and it’s so easy to whip up that even little kids could definitely help make it!

Me, I’ll have mine with a cup of peppermint tea please!

    Looks delicious. It has been far too long between oaty slices for me. Largely because i love them so much I end up eating the whole tray 🙂

    I make a very similar oat slice and love playing around with different combinations of fruit, nuts and chocolate. It is always a winner in this house!
