Recipe: Ginger Cookies

I wanted to make some thankyou cookies for a colleague who had been helping me out on a major project I have been working on over the last few months, and as we’re hurtling towards Christmas I thought it was only appropriate that I made him some spicy, delicious, ginger flavoured treats. Instead of traditional ginger biscuits which tend to be flat and crunchy like a gingernut biscuit, these are soft and doughy but still full of that delicious ginger flavour!

I adapted the recipe from this one that I found on the Taste of Home website, but upping the spices a little and swapping the caster sugar for brown sugar, and they turned out a treat!

Ingredients List

  • 3/4 cup butter
  • 1 cup brown sugar
  • 1 egg
  • 1/4 cup molasses
  • 2 1/4 cups plain flour
  • 3tsp ground ginger
  • 1tsp baking powder
  • 1.5tsp ground cinnamon
  • 3/4tsp ground cloves
  • 1/4tsp salt
  • Caster sugar for rolling

Steps

  1. Preheat the oven to 180C
  2. Cream the butter and sugar until light and fluffy
  3. Add the egg and molasses and beat until well combined
  4. In another bowl combine all the dry ingredients then gradually add to the wet mixture, mixing until well combined
  5. Roll out balls roughly 5cm in diameter and roll them through the caster sugar
  6. Place them on baking trays with a good gap between them, and flatten them slightly
  7. Bake for 10-12 minutes, until they are lightly browned and have puffed up
  8. Leave to cool completely on a wire rack
  9. Enjoy!

The biscuits were super delicious (I may have snuck one before I gave the rest away as intended!) and I will be making them again before Christmas without a doubt. They were nice and quick too, so you can whip up a batch and have them cooled and ready to go in no time – perfect for this time of year when spare time is hard to come by!
