Recipe: Layered Vegan Breakfast

I’ve been on the green smoothie bandwagon for a while now, and although I still love them I thought it was time to try something different for my weekday breakfast. I love anything that can be prepared in advance as whilst I’m somewhat of a morning person, I like to be as efficient as possible, particularly when it comes to breakfast. I had seen different types of layered breakfasts on instagram and pinterest so decided to have a go at making up my own combination!

The first thing I did was make a chia pudding to use as the base layer. To make it I used:

  • 2 bananas
  • 4 tbs chia seeds
  • 1 cup almond milk
  • Pinch of cinnamon

You simply mash the banana, stir in the chia seeds then the milk and cinnamon and then pop it in the fridge until it turns into a gel like substance. I left mine for about 2.5hrs before I did the rest!

My layers from bottom to top were:

  • Chia pudding
  • Blueberries
  • Muesli
  • Raspberries
  • Soy yoghurt
  • Chocolate Buckinis

You could easily swap in any other fruit you like, and if you don’t have something like the buckinis (although they are delicious! Another Loving Earth Product I highly recommend!) you could add some chopped up mixed nuts like almonds and walnuts.

Voila! I think they look pretty great and they definitely tasted delicious. It’s especially good if you have a long spoon so you can get bits of all the layers in every bite! Such a great way to start the day!

    What is a buckini and where can I buy some? This sounds nice, I like the idea of putting it in jars so you can make a couple in advance and store them in the fridge. How long do you think one would last in the fridge?

      A buckini is this: https://lovingearth.net/products/110/chocolate-buckinis-organic-activated-organic and they are delicious! I bought mine from the Wholefoods shop on Smith Street but I’ve seen them in healthfood stores too.
      I haven’t made more than 3 days worth yet, and I don’t think I would. By day 3 it was all a bit mashed together, but then it had also travelled with me which probably didn’t help!

      It works really well to give it a bit more flavour. You can use other fruits too – this morning’s variety was blueberries for the chia pudding which was delish as well! Endless possibilities! Well almost!

    I just LOVE that word, “buckini” – so cute!! I didn’t know what it was either until I had a look at the Loving Earth website. Wow, sounds so yum!
