Recipe: Lemon Coconut Cupcakes

We recently had a fundraising afternoon tea at work for a colleague who was taking on the challenge of riding over 1000km in a week for ovarian cancer research so I thought I better get my bake on! I used to take cupcakes into work all the time but hadn’t done so in a long time, so thought I would rectify that with these lemon coconut cupcakes.

They are the perfect blend of light and zesty and of course the combination of lemon and coconut is hard to beat. I topped these with a lemony-cream cheese icing as I wanted them to be a little fancier, but you could go for a simple lemon icing for afternoon tea at home. Although seriously, I’ll take any excuse for cream cheese icing!

Lemon Coconut Cupcakes | I Spy Plum Pie

Ingredients List

For the cupcakes

  • 3/4 cup butter
  • 1 cup caster sugar
  • 3 eggs
  • Zest of 2 lemons
  • 1tsp vanilla essence
  • 1 1/2 cups plain flour
  • 1/2tsp baking powder
  • 1/2tsp baking soda
  • 1/2 cup sour cream
  • 2/3 cup shredded coconut

For the icing

  • 250g cream cheese (softened)
  • 2tbs butter
  • Zest and juice of 2 lemons
  • 1/2tsp vanilla essence
  • 2 cups icing sugar
  • 1 cup shredded coconut (divided)

Steps

For the cupcakes

  1. Preheat oven to 180C
  2. Cream butter and sugar until pale and creamy
  3. Add eggs one at a time, beating well between additions
  4. Beat in the vanilla and lemon zest
  5. Beat in the dry ingredients and sour cream until just combined then fold in the coconut
  6. Spoon into paper lined cupcake pan and bake for approximately 20 minutes, until lightly golden and a skewer comes out clean
  7. Leave to cool in the pan for 10 minutes then continue cooling on a wire rack

For the icing

  1. Beat together the cream cheese, butter, lemon zest, lemon juice and vanilla until well combined and fluffy
  2. Gradually add the icing sugar, beating well
  3. Fold through 3/4 of the coconut
  4. Spread onto the top of the cooled cupcakes then sprinkle with the remaining coconut
  5. Enjoy!

Yum! These lemon coconut cupcakes were a big hit and I wasn’t left with any to bring home which is probably a good thing! I love anything with some lemon in it and whilst these aren’t over the top with their lemony flavour but you definitely know it is there.

The other excellent thing about these cupcakes is that they only take one bowl to mix up which is always a bonus in my little kitchen. Now, if only I could work out the best way to transport cupcakes to work on foot then I’d be onto a real winner!
