Recipe: Lime Slice

A colleague at work brought in a giant bag of limes recently, so I took home as many as I could carry and then pondered over what to make with them. I decided I should return them full circle, so made this lime slice that I then took in to work to share with my colleagues. Circle of life complete! Don’t be fooled by the fact the limes are yellow on the outside (and therefore the zest is yellow!), the insides were nice and green and had that delicious lime tang. In saying that, this slice would work just as well with lemons, or a combination of the the two!

Ingredients List

For the Base

  • 1/3 cup sugar
  • 125g butter (room temperature)
  • 1 1/4 cups plain flour

For the filling

  • 4 eggs
  • 1 cup sugar
  • Juice of two limes
  • Zest of one lime
  • 1/4 cup plain flour
  • 1/2 tsp baking powder
  • Icing sugar (optional)
  • Flaked coconut (optional)

Steps

For the Base

  1. Preheat the oven to 180C
  2. Cream the butter and sugar until light in colour
  3. Fold through the flour to make a dough-like consistency
  4. Press into a lined tray, trying to make it as even as possible
  5. Bake for 20 minutes, until golden coloured and firm to touch. Leave to cool

For the filling

  1. Lightly beat the eggs, then add the sugar and cream until light and fluffy
  2. Stir in the lime juice and zest
  3. Fold in the flour and baking powder
  4. Pour onto cooled base and cook for approximately 25 minutes. It should be just firm
  5. Optional – when the slice is almost cooked sprinkle with flaked coconut and return to the oven to finish cooking.
  6. Leave to cool completely in the pan before slicing. If you didn’t sprinkle with coconut, then dust with icing sugar before serving
  7. Enjoy!

    Yummy! I have a pile of limes that I wasn’t sure what to do with but will definitely use them for making this recipe 🙂

      Yeah I hate having to buy them, I took as many as I could carry when he brought them in to work! Luckily my parents tend to keep me in good supply of citrus as well!

    Can you please tell me the quantity of cream? It has been left out of the ingredients.

      Hi Suso, thanks for your comment. There is no cream in the ingredients, the instructions refer to ‘cream’ with regards to beating the eggs and sugar, or butter and sugar together, until they are light and fluffy. Does that make sense? Sorry if it was confusing!

      Just keep it on 180 from when you cook the base and you’re good to go!
