Recipe: Mini Vegetable Frittatas

Is there anything better than mini versions of things, food included? I don’t think so, and these mini frittatas are no exception. Years ago when I was living in Amsterdam a friend and I made a whole set of mini things for some friends that had just moved to London – it’s amazing what you can find in miniature once you start looking! We had a mini table tennis set, mini cups and bowls and spoons, tiny cans of drink and all manner of other itty bitty things. It ended up being a rather large collection of very small things!

These mini frittatas are great for a picnic or combine a couple with some salad for a delicious lunch straight from the fridge. You can change up the vegetables to use up what you have on hand, but I particularly like having the fresh spinach and tomato on the top!

Mini vegetarian frittatasIngredients List

  • 8 eggs
  • 1/2 cup cream
  • 2 cloves garlic
  • Salt and pepper
  • 1/2 cup roasted capsicum
  • 1/4 cup roasted artichoke
  • 1 tomato
  • 1/3 cup baby spinach

Steps

  1. Preheat oven to 180C and grease your muffin pans
  2. Whisk together the eggs, cream, minced garlic and season with salt and pepper
  3. Dice the capsicum and artichoke and evenly distribute into the bottom of the muffin pans
  4. Pour over the egg mixture, filling each to the 3/4 mark
  5. Dice the tomato and spinach and gently sprinkle over the top of the egg mixture
  6. Bake for 25 minutes, until set and golden on top. Allow to cool slightly in the pans, then remove and cool on a wire rack
  7. Enjoy!

Mini vegetarian frittatas

Having the vegetables at both the bottom and the top of the mixture means you get a better distribution of flavour through the frittata, it’s only a small thing but I think it makes them taste that much better. The combo of the marinated veggies with the fresh tomato and spinach works really well, but if you don’t have the marinated veggies on hand then mushrooms would be a great substitute, or even some sun dried tomatoes if you’re a big tomato fan!

Mini vegetarian frittatas

These freeze well too, so you can make a big batch and pop them in the freezer for a rainy day (or the sudden desire for a picnic!). Mine didn’t last long enough this time to need freezing though!
