Recipe: Orange Pecan Granola

This is one of the times I wish we had improved technology to the point that you could share scents through the computer because this orange pecan granola smells amazing! I’ve been having a regular sourdough-avocado-eggs breakfast for a little while now but with the return of sunny, warmer weather I decided it was time to have something a bit lighter and homemade granola was just the ticket!

I’ve made a few different granola combinations in the past (including this healthy chocolate version!) but this one is my new favourite combination, and it went down a treat with my folks when I gave them a jar too! Seriously, I wish you could smell it!

So, what’s in it?!

Ingredients List

  • 1 cup pecans
  • 1/2 cup hazelnuts
  • 4 cups oats
  • 1/2 cup pumpkin seeds
  • 1 cup coconut
  • 1 cup dried cranberries
  • 2tsp cinnamon
  • Pinch of salt
  • Zest of two oranges
  • 2tbs brown sugar
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil (room temperature)

Steps

  1. Preheat oven to 180C and line a baking tray
  2. Roughly chop the pecans and hazelnuts
  3. Combine oats, nuts, seeds, coconut, cranberries, cinnamon and salt in a large bowl
  4. In a small bowl rub together the orange zest and sugar to release the oil from the zest, then add to the bowl and stir through the oats mixture
  5. Pour in the maple syrup and coconut oil and fold through to evenly coat the oat and nuts mixture
  6. Spoon onto the tray and spread evenly, then bake in the oven for 25 – 30 minutes, stirring once, until lightly golden
  7. Leave to cool completely in the pan then transfer into containers
  8. Enjoy!

Orange Pecan Granola | I Spy Plum Pie

I’ve been enjoying it for breakfast most mornings with a generous dollop of greek yoghurt and a sprinkle of fresh berries which is super delicious. Slices of banana are also tasty, or you could go all out on the orange front and top the granola with fresh orange slices. Yum all round.

Make sure you leave the granola to cool completely in the pan as this helps it get extra crispy and also makes it nice and clumpy which is one of my favourite things about granola. If you don’t have maple syrup on hand then you can use honey instead, and you can always use gluten-free oats if you’d like to make this suitable for people who can’t have gluten.

I won’t lie, I haven’t just been eating this for breakfast, I’ve been sneaking small handfuls from the jar whenever I need a snack – it’s that tasty! Go on, give it a try, I have a sneaking suspicion you’ll love it as much as I do!

    YuM! I love making my own granola. It’s so much cheaper and you can pop all these lovely goodies in there!!! Your version looks absolutely beautiful!!

    There’s nothing yummier than homemade granola – it’s tastes so good, it’s economical and best of all there’s no hidden nasties! I love the idea of the maple and the orange – oh so tasty!

    Thanks for receipe ingredients so inviting except sugar, so I am leaving it out as there appears to be enough sweet fruit and syrup. Love making my own breakfast cereal.
