Recipe: Passionfruit Coconut Cake

This time of year always seems to result in last-minute catch-ups and people popping by for a cuppa (or a beer!) and so having a delicious cake on hand is always a good idea in my books! This passionfruit coconut cake is so easy to whip up but looks oh-so-pretty and makes use of the delicious passionfruit that is cheap & abundant at the moment! Perfect!

I slightly tweaked a recipe I found on Taste

Ingredients List

For the Cake

  • 3 eggs
  • 175g butter
  • 1 cup caster sugar
  • 1 1/3 cups self raising flour
  • 2/3 cup shredded coconut
  • 1/2tsp baking powder
  • 1/2 cup sour cream
  • 2 passionfruit

For the Icing

  • 125g butter
  • 1 cup icing sugar
  • 3 passionfruit
  • Shredded coconut

Steps

  1. Preheat oven to 170C
  2. Lightly whisk the eggs then combine all the cake ingredients except the passionfruit in a bowl and beat until smooth
  3. Scoop out the flesh of the passionfruit and fold through the cake mixture
  4. Line a 23cm cake pan and pour the cake mixture in, smoothing the top
  5. Bake for 45-50 minutes, until lightly golden and skewer comes out clean. Leave to cool in the pan for 5 minutes, then cool completely on a wire rack
  6. Beat together the butter and icing sugar until pale and creamy
  7. Use a small strainer to separate the passionfruit juice from the seeds, pressing down with a spoon. Reserve the seeds and slowly beat the juice in with the butter and sugar
  8. Toast the coconut in a fry pan, tossing regularly, until golden and set aside to cool
  9. Spread the icing over the cake then top with the passionfruit seeds and sprinkle with toasted coconut
  10. Enjoy!

One of my favourite parts of this passionfruit coconut cake is the icing – it’s zesty and delicious, and the addition of the seeds and toasted coconut on top makes it even better! I also love that the cake can be made in just one bowl – anything that requires too many dishes leaves my poor little kitchen in complete disarray!

Seriously though, if the response I got to making this cake is anything to go by I highly recommend you whip it up ASAP, it lasted absolutely no time at all!
