Well would you look at that, it’s my blogiversary! Each year I share a plum-focused recipe to celebrate and this year I have a plum tomato and ricotta salad for you all! Simple, fresh and delicious, and really highlights the delicious sweetness of late summer plums. So good!
I slightly tweaked a recipe I found here
Ingredients List
- 4-5 plums
- 8 heirloom tomatoes
- 1/4 cup extra virgin olive oil
- 1tbs red wine vinegar
- 1/2tsp salt flakes
- Pinch of ground white pepper
- Two baby cos lettuce
- 100g ricotta
- Basil leaves
Steps
- Slice the cheeks off the plums then cut into wedges
- Cut the tomatoes into wedges
- Combine the olive oil, vinegar, salt and pepper and whisk well
- Place the plums and tomatoes in a bowl and pour over the dressing, tossing to coat
- When ready to serve, roughly tear the lettuce and place on a serving dish
- Top with the plums and tomatoes then crumble over the ricotta
- Garnish with basil leaves and serve
That’s all there is to this plum tomato and ricotta salad! It’s so quick and easy to prepare, but so delicious and works excellently as part of a BBQ spread. Salty, sweet, vinegar – what more could you want from one easy dish!
I’m pretty lucky that my blogiversary coincides with my mum having an excess of plums on her trees so there’s always delicious produce for me to play with. In fact, there’s usually more than we can get through so it’s handy I’m building up a list of plum recipes!
Every year when my blogiversary rolls around I find it hard to believe just how long I’ve been doing this for! The fact it will be double digits next year is a little frightening, but I’m still enjoying sharing things with you all, which is the key thing really! I really appreciate all the support – hearing from people who have made my recipes or been somewhere I have shared really makes my day. Hopefully I’ll have lots more of the latter this year too!
