My love of potatoes is very well documented but to be honest I don’t make potato salad anywhere near as often as I should. I didn’t want a particularly creamy potato salad this time around, so went for a zingy honey mustard dressing instead for this potato bean salad. It’s fresh, light & super tasty!
Ingredients List
- 750g potatoes
- 400g green beans
- 1/4 cup capers
- 1/2 cup flat leaf parsley
- 1/4 cup chives
- 1tbs white vinegar
- 1tbs honey
- 2tbs wholegrain mustard
- 1/4 cup olive oil
Steps
- Scrub the potatoes and slice them into quarters (or eighths for larger potatoes)
- Boil the potatoes in salted water for 10-15 minutes, until just cooked through
- Trim the beans then cook in boiling water for 2-3 minutes, then immediately drain and run under cold water to refresh
- Combine the potatoes, beans and capers in a serving bowl
- Finely chop the herbs and toss through the salad
- Combine the vinegar, honey, mustard and oil in a jar and shake well to combine
- Drizzle over the salad, tossing well to combine
- Enjoy!
This potato bean salad is delicious both warm and cold, making it an excellent option to take to picnics and BBQs. It works well as a standalone salad for lunch, or as a delightful side dish at dinner. The dressing is possibly my favourite part of the whole dish, which is saying something as it wasn’t that long ago that I wasn’t a mustard fan at all! Add lots of herbs and you’ve got yourself a winning dish!

I love creamy dressings without a doubt, but this salad would be perfect for those nights when I just don’t feel like something heavy.
