Recipe: Raspberry & Nectarine Tea Cake

If you follow I Spy Plum Pie on facebook or instagram you might have noticed I had some fairly exciting news over the weekend – I bought my first apartment! I bought at auction which was extremely nerve-wracking, but thankfully it all worked out in the end! I’m super excited, and I’m sure the next 60 days will fly by until I get the keys in my hot little hands!

I am pretty sad to be leaving my current sharehouse, as not only are my housemates great, but it’s a really lovely place (and a TV set!) but the thought of having a whole kitchen to myself is pretty exciting! The place has a pretty good sized north-facing balcony too, so I shall be trying my hand at growing some bits and pieces and I’ll be sure to share my adventures with you all!

Anyway, onto the cake! Last night I went round to a friends place for dinner and I offered to bring dessert. It had been a big weekend of birthdays, brunches and other outings (not to mention house buying!) so I wanted to make something quick and easy. I had used Not Quite Nigella’s Easy One Bowl Pear Tea Cake recipe before so decided to use it again, but mix up the choice of fruit as I had fresh nectarines and raspberries from my last veggie box delivery. I altered Lorraine’s recipe somewhat slightly, but predominantly this is the recipe from Not Quite Nigella!

Ingredients List

  • 3/4 cup wholemeal flour
  • 3/4 cup self-raising flour
  • 1/2 cup brown sugar
  • 1/4 cup caster sugar
  • 1 egg
  • 125g melted butter
  • 1tsp vanilla
  • 4 nectarines
  • 200g fresh raspberries
  • 2tbs brown sugar (additional to above)

Steps

  1. Preheat oven to 180C
  2. Combine flours, sugars, egg, melted butter and vanilla in a bowl and stir to combine
  3. Press 3/4 of the dough into your pan, it should be slightly sticky
  4. Chop the nectarines into small pieces and scatter on top of the dough, along with the raspberries
  5. Place pieces of the remaining dough on top of the fruit, leaving some parts uncovered
  6. Sprinkle the brown sugar on top and bake for 40-50 minutes
  7. Leave to cool in the pan before moving it
  8. Enjoy!

It’s a super easy cake to make, and creates very little in the way of dishes, but looks pretty so is fancy enough to take round for dinner! My favourite kind of baking!

    I saw you mention you bought your first place, congrats! It must feel amazing 😀 I personally can’t wait to see what you make in your kitchen and grow on that balcony.

      I love summer fruits so much – stone fruit, berries, tropical fruits the whole lot! So delicious!
      I can’t wait to get into my own kitchen! Even having a fridge and pantry to myself will be such a luxury! Hopefully I can keep some plants alive on the balcony too!
