Recipe: Roasted Capsicum and Fennel Soup

I love soup for lunch when the weather gets cooler, but I always found it an annoying thing to take to work to reheat. Given I’m still working from home a bit it’s the perfect time to add more soup to my rotation and this roasted capsicum and fennel soup is delicious. Packed with flavour but super simple to make!

Ingredients List

  • Brown onion
  • 2tbs olive oil
  • 3 cloves garlic
  • 1 fennel bulb
  • 3 carrots
  • 1tbs fresh thyme
  • 2tbs balsamic vinegar
  • 300-340g jar roasted capsicums
  • 2tbs tomato paste
  • 1 can cannellini beans
  • 4 cups vegetable stock
  • Red pepper flakes
  • Salt and pepper
  • Fresh parsley and thyme to serve

Steps

  1. Finely dice the onion
  2. Heat the oil in a large, heavy bottomed saucepan and then add the onion and cook until translucent
  3. Meanwhile, mince the garlic and chop the fennel and carrots
  4. Add to the pan with the fresh thyme and a pinch of salt and cook for 10 minutes, stirring occasionally
  5. Add the balsamic vinegar, red capsicums (without their oil), tomato paste and beans and stir to combine
  6. Pour in the vegetable stock and simmer for 15-20 minutes, until the carrots are tender
  7. Blitz to your desired consistency (I use a stick blender) then season and add red pepper flakes to taste
  8. Spoon into bowls and top with fresh parsley and herbs

That’s all there is to this roasted capsicum and fennel soup! You can of course roast your own capsicums for this soup, but buying jarred ones is definitely a quicker option. In fact, this whole soup is very quick to whip up, and all happens in one pan too which I always love. That’s why I tend to use my stick blender as well – much easier to clean afterwards!

One of the things I love about this roasted capsicum and fennel soup is that thanks to the cannellini beans it is creamy and filling, but still vegan friendly too. Plus, it freezes well so you can make a big batch and have delicious soup on hand whenever you need it. Perfect for those cold Sunday evenings when you don’t feel like cooking!
