Recipe: Sundried Tomato & Ricotta Dip

If you’ve been around these parts for long then you’ll know I’m a rather large fan of homemade dips, there are so many flavour combinations and they’re generally super easy to whip up, so making them at home just makes sense! Today’s recipe is no exception, it’s full of flavour and it takes under 15 minutes to prepare, can’t go wrong with that!

Sundried Tomato and Ricotta Dip

I made this dip as a snack to take to work, the ricotta is full of protein and calcium so it’s great to give me some mid-afternoon energy and keep me full through to dinner. I just have to make sure I don’t eat too much of it, as it’s not exactly a low-fat ingredient!

Ingredients List

  • 1/3 cup sundried tomatoes
  • 1/4 cup fresh basil
  • 1/4 cup pine nuts
  • 275g ricotta
  • Juice of a lemon
  • 2tsp chilli flakes (or to taste)
  • 3tsp oil (from sundried tomatoes)

Sundried Tomato and Ricotta Dip

Steps

  1. Finely chop the sundried tomatoes and basil
  2. Toast the pine nuts in a dry pan until lightly golden
  3. Combine the sundried tomatoes, basil, pine nuts and ricotta in a bowl and mash together
  4. Add the lemon juice and chilli flakes and stir through, then gradually add 2 tsp of the oil
  5. When all combined drizzle the remaining oil on top and serve
  6. Enjoy!

Easy as that! Jam packed with flavour and ready in an instant. No need to buy dip when it’s that simple to prepare at home!

    Yummy! I’ve being looking for different dips to try this summer and this recipe is definitely one to try, it’s so different.

      Thanks Lucy! I think sometimes it’s nice to have dips where you can see all the ingredients, rather than have them all blended up like a hummus! And yep, it’s definitely cheaper (and so easy!)

    What are you dipping in there? They looks scrumptious too! I think I need to stay away from your dip though – once I start with the toasted pine nuts I’m a goner. Too yum to put the lid back on or pop it back in the fridge. Definitely too yum to share.

      Luckily the dip is fairly rich, so that helped me pop the lid on and put it away again! So did only bringing small amounts to work each day! I’m dipping in something called a ‘Flat’ – they are basically just squished down veggies that are dehydrated into a cracker. These ones were spicy capsicum flavour and delish!       Thanks Jo! It would definitely be a great dip to take to a friends place, it’s not really runny so it travels well too. And just quietly, if you have any leftovers it makes a pretty delicious topping for pasta too!
