Recipe: Tempeh Lettuce Cups

Tempeh is not something I cook with too often, but I have a feeling these tempeh lettuce cups will be showing up on my summer menu a lot this year. Not only are they incredibly delicious, but they’re also super healthy & ready in no time. Perfect!

I slightly amended a recipe from Oh My Veggies

Ingredients List

For the sesame ginger sauce:

  • 1/4 cup water
  • 1/4 cup soy sauce
  • 3 tbs honey or maple syrup
  • 1 tbs + 1 tsp sesame oil
  • 1tsp chilli sauce
  • 1 tsp fresh grated ginger
  • 1 clove garlic, crushed
  • 1 tsp cornstarch

For the lettuce wraps:

  • 2 medium carrots
  • 1 red capsicum
  • 150g snow peas
  • 200g tempeh
  • Lettuce leaves (romaine or butter work well)
  • Cashews
  • Spring onions

Steps

  1. Combine all ingredients for the sesame ginger sauce and whisk well, then set aside
  2. Grate the carrots and dice the capsicum and snow peas
  3. Heat some oil in a fry pan and cook the vegetables for 3 minutes
  4. Crumble in the tempeh and stir to combine, then cook for a further 3 minutes
  5. Pour in the sauce, toss to combine everything and cook for 7-10 minutes, stirring occasionally, until the sauce has thickened
  6. Allow to cool slightly, then spoon into the lettuce leaves and top with chopped cashews and spring onions

I love how super simple this dish is, but it’s definitely not lacking anything in the flavour department! If you haven’t cooked with tempeh before then this is a great place to get started. It’s high in protein and as it is made from fermented soy beans it can be easier to digest than tofu and other soy bean products. It’s definitely something I’m planning on cooking with more over the coming months. Not just these tempeh lettuce cups on repeat either!

One other excellent features of this dish is the fact the tempeh mix reheats well, so you can whip it up one night and have some delicious leftovers waiting for you the next day! My kind of cooking!
