Fresh and crunchy salads are definitely my current go-to and this thai tofu soba noodle salad is an absolute winner. Easy to prepare, packed with flavour and vegan friendly too! Definitely one to add to the rotation this spring and summer.

Ingredients List
For the tofu
- 500 g firm tofu
- 2 cloves garlic
- 1tbs tamari
- 1tbs fresh lime juice
- 1tsp minced ginger
- 1tbs olive oil oil
For the dressing
- 2 cloves garlic
- 1 lemongrass stalk
- 1tbs minced ginger
- 2tbs fresh lime juice
- 1tbs vegan fish sauce
- 1tbs tamari
- 2tsp sesame oil
- 1tsp chilli flakes
- 1/2 cup light coconut milk
For the noodle salad
- 180g dry soba noodles
- 1 bunch spring onions
- 1 red capsicum
- 1/2 green cabbage
- 150g snow peas
- 1 cup fresh coriander leaves
- ½ cup Thai basil leaves
Steps
- Press the tofu and cut into cubes
- Mince the garlic and combine with the remaining ingredients and pour over the tofu. Set aside to marinate for 15-20 minutes.
- Mince the garlic and finely chop the white part of the lemongrass. Combine with the remaining dressing ingredients and set aside
- Cook the soba noodles in boiling water for 3 minutes, then drain and rinse under cold water to separate the noodles. Drain and place in a serving bowl
- Thinly slice the spring onion, capsicum and cabbage and add to the serving bowl
- Trim the ends of the snow peas and slice in half then add to the serving bowl
- Heat some oil in a large fry pan and cook the tofu until browned on all sides
- Add the tofu to the serving bowl and toss to combine all the ingredients
- Pour over the dressing and toss to coat then top with the fresh herbs
That’s all there is to this thai tofu soba noodle salad! I know the list of ingredients look long, but there’s lots of repetition and most are pantry staples too. Plus, it’s worth it for the end result – it’s seriously tasty. I love the combination of the soba noodles with all the crunchy vegetables, and the creamy dressing is just the cherry on top!
You can even make the dressing ahead of time, including marinating the tofu, which makes the whole thing even quicker when you’re ready to serve. Perfect for when you’re whipping up a few dishes for a lunch or BBQ and need to have a few things on the go at once. Either way, I just recommend you give this salad a try!
