I really have been all about the soups this winter and this turmeric green lentil soup is another winner. It’s super simple, super delicious and super healthy to boot. Plus, it only needs one pot which is always a bonus in my kitchen!
I slightly amended a recipe I found at Taste
Ingredients List
- Red onion

3 ribs celery
- Olive oil
- 3 cloves garlic
- Rind of a medium sized lemon

1tsp turmeric
-
1/2 tsp cinnamon
-
1/2 tsp ground ginger

Pinch of chilli flakes
- 2 cups vegetable stock
- Can of crushed tomatoes
- 1 cup green lentils
- 200g green beans
- Half a bunch of kale
- Juice of a lemon
- Fresh coriander
Steps
- Dice the onion and chop the celery
- Heat some oil in the bottom of a heavy pan and cook the onion and celery for 5 minutes, until softened
- Mince the garlic and add to the pan with the lemon rind and spices, stir through and cook for a minute
- Add the stock and tomatoes, then rinse and drain the lentils and add to the pot with 3 cups of water. Stir to combine then simmer partially covered for 30 minutes
- Trim the green beans and roughly chop the kale then add to the pot and cook for 3-4 minutes. Add the lemon juice and season with salt and pepper
- Top with fresh coriander and serve
This turmeric green lentil soup is super warming thanks to the spices, and also hearty and filling enough for dinner. It’s vegan friendly, zesty and oh so delicious. This is a particularly excellent soup to make during the week as it can be left to simmer while you get other things done! Plus, it reheats well too!
Part of the reason I think I’ve gone so gung-ho for soup this winter is because I love making them in my Le Creuset pot. It seriously is the best addition to my kitchen that has happened in a long time!
