Recipe: Zucchini Haloumi Slice

I’m not a huge fan of sandwiches for work lunches and now that fresh salads aren’t hitting the spot quite so much I gave this zucchini haloumi slice a go and oh boy was it tasty! It’s filling, delicious and so easy to whip up, I think it’s going to become a staple in my kitchen!

Zucchini Haloumi Slice | I Spy Plum Pie

I slightly tweaked this recipe I found on Taste

Ingredients List

  • Large red onion
  • 2 garlic cloves
  • Zest of a lemon
  • 2tbs olive oil
  • 500g zucchini
  • 225g haloumi
  • 1/3 cup fresh dill (plus extra to serve)
  • 1/3 cup fresh mint (plus extra to serve)
  • 6 eggs
  • 3/4 cup spelt flour
  • 1tsp baking powder
  • 2tbs pumpkin seeds
  • 1tbs sesame seeds
  • 1tsp sumac
  • 3/4tsp dried dill
  • 3/4tsp dried mint

Steps

  1. Preheat oven to 170C
  2. Slice 1/3 red onion into thin rings and set aside, then dice the remainder of the onion
  3. Mince the garlic
  4. Heat 1tbs oil in a frypan and cook the diced onion, garlic and lemon zest for 3 minutes then place in a large bowl
  5. Grate the zucchini, squeezing out the excess liquid, and add to the bowl
  6. Grate the haloumi and add to the bowl, then chop the herbs and add all to the bowl
  7. In a separate bowl whisk together the eggs and 1tbs oil and then sift in the spelt flour and baking powder, whisking until smooth and combined. Season with salt and pepper
  8. Add to the large bowl and fold through to combine, then spoon into a lined baking dish
  9. Top with the reserved onion rings then sprinkle with seeds and dried herbs
  10. Bake for 30-40 minutes, until set and lightly golden, then sprinkle with reserved fresh herbs and serve with lemon wedges

This zucchini haloumi slice is seriously tasty! I took it to work with a small side salad and some greek yoghurt to dollop on top and everyone around me was pretty jealous of my lunch. I like that the addition of the spelt flour makes it almost cake like rather than your normal quiche, and I’ll never say no to haloumi!

It keeps well in the fridge for a few days so it’s another excellent Sunday afternoon dish that will see you through a few days of work lunches. Other than the arm workout you get from all the grating it’s very simple to make as well!

    Wow this looks extremely tasty. Seems like a much better choice than buying breakfast from a cafe.

    Totally love the addition of haloumi, I too often want something a little different from the basic wraps and salads for lunch and this does look great.
