Given my love of hearty salads it’s probably no surprise that when it comes to family gatherings I am generally given the task of bringing along a salad or two. With Christmas fast approaching I thought it was about time I started playing with some options to make this year and so far this roast chickpea & sweet potato salad is sitting in first place.

Recipe: Sweet Potato and Lentil Salad

This is one of those salads that is hearty enough to be a meal all by itself, without leaving you feeling sluggish and snoozy afterwards. It’s full of protein from the lentils, Vitamin A and C from the sweet potato and is a little bit fancy thanks to the addition of goats cheese! You can dress this salad in pretty much whatever dressing you like best – I went with a simple lemon juice and dijon mustard dressing, but seeded mustard, a tahini dressing or even an apple cider vinegar dressing would work well too. Make it your own!

Recipe: Asparagus, Leek & Goats Cheese Risotto

I’m so excited that it is finally asparagus season again in Australia! I was very happy to find some in my latest veggie box delivery, and I’m hopeful that they keep showing up as they are such a delicious vegetable and so easy to cook. I’m sure my mum must find it funny that I’m now so enraptured by asparagus as I definitely wasn’t always – but I guess that’s all part of growing up!

Recipe: Green Bean & Lentil Salad

Lentils come in and out of favour with me. Whilst I will throw chickpeas into just about anything I sometimes go weeks without going near lentils, and then all of a sudden will feel a urge to use them in something. That is what happened with this dish – I woke up and new I wanted to make a lentil salad for my work lunch and so whipped up this delicious dish. It’s quick, easy, healthy and full of flavour – what more could you want!

Recipe: Beetroot and Walnut Salad

Despite it being the middle of a rather fresh Melbourne winter I can’t seem to stop eating salads. To make them more season appropriate I have been roasting various winter veggies to use as the star of the salad – and this time it was beetroots turn to shine. I never used to eat much beetroot but in recent years I have been finding myself ordering dishes with it more and more. It is so sweet and colourful when roasted and turns juices the most amazing colours!
