With Christmas quickly coming up on us it starts to be time to plan the menu for the day, and a big pile of greens is always an excellent choice to balance out the meal. These cranberry hazelnut greens are not only fresh and light but very Christmassy in flavour, and they look pretty too!

Recipe: Vegetarian Massaman Curry

I found myself with a stash of coconut milk and my mum’s homegrown potatoes that needed using so the logical response was to make vegetarian massaman curry! It’s always been one of my favourite dishes to order from Thai restaurants and it turns out it is just as delicious when made at home!

Recipe: Pesto Pasta Salad

Thanks to everyone that got involved in the 1st Meatless Monday linkup! We’re back for week 2 and I can’t wait to see what you’ve all been cooking!

I had some friends over recently for a BBQ to watch the AFL Grand Final (we just don’t talk about the result!) and I was on salad duty, which is no surprise given my love for salads! I went with a few old favourites like my potato salad, as well as this easy-peasy pesto pasta salad! It was quite the hit so I will definitely be pulling it out again for more BBQs over the summer!

Recipe: Black Rice Salad

The other day I was perusing the aisles of the health food store near my work (please tell me I’m not the only one who does that!) when I spotted some black rice on sale and decided it needed to come home with me. I had seen a few recipes using black rice but had never eaten it myself, so after doing some research decided the first way I wanted to try it was in a salad. I picked the brightest coloured vegetables from my veggie delivery, and away I went!

Recipe: Sweet Potato & Broccolini Ramen

Despite the fact this looks like a pasta dish, that is in fact ramen on the bottom there! I whipped this up the other evening when short on time and ideas for dinner and I was super happy with the combination that I thought I should probably share! Everything cooks in under 20 minutes so then it’s just a matter of putting it all together and pouring some marinade over the top and you’re done!
