Recipe: Peach Mint Syrup

When I visited my parents over Christmas I was greeted by peach and plum trees laden with fruit, with my mum in a daily battle with the birds to ensure we got at least some of the ripest fruit before they helped themselves to it! Mum had been madly stewing them and baking muffins but we couldn’t use them fast enough, so I thought I’d try something different with a few of the peaches and turned them into a syrup!  (more…)

Recipe: Smashed Broad Beans

Living in the inner city means there’s not a whole lot of space for growing our own veggies. We do our best by using pretty much every square centimetre of our (north-facing) front yard, but we’re still not talking much space! This means whatever we do manage to grow needs to be relished when we eat it and for me that means picking it fresh then doing as little to it as possible. That was exactly the case with these broad beans – I collected as many as I needed from the garden, then did very little to them in order to let them shine all on their own! The result was absolutely delicious, and I didn’t even need to leave the house – perfect!

How To: Flavoured Cucumber Water

I’ve been a big water drinker since I was a kid – we didn’t have much in the way of fizzy drinks or even cordial at home, it was always water with dinner and because I did a lot of singing when I was younger I got into the habit of carrying a water bottle around pretty early on. These days I keep a big bottle on my desk at work which I refill multiple times throughout the day, however I often find myself not drinking enough water on the weekend as I get busy and distracted, until I find myself with a headache!

Recipe: Mint Lemonade

If you follow I Spy Plum Pie on facebook you may have seen that I have been the recipient of an impressive stash of lemons from my parents trees in recent weeks. If you’re not, can I be so bold as to suggest maybe you should be? It’s as easy as clicking like in the box in the sidebar, or visiting here instead! Lemons never last long in my house as we all have a multitude of uses for them, but one sunny Saturday morning I decided to embrace my inner child and make some lemonade. I fancied it up a little bit with the addition of mint and the end result was delicious! I can see this being made over and over  this summer (well, as long as my supply of lemons holds up!) and I have a sneaking suspicion it might work rather well as a base for cocktails too!
