Recipe: Mexican Bean Salad

This recipe is a super quick and easy meal I like to make a big batch of to use for work lunches – it’s healthy, filling and full of veggies. You can pretty much use whatever veggies you have on hand, so I used what I had left from this fortnight’s veggie box delivery.

A Sunday afternoon in the kitchen

One of my favourite ways to wind down on Sunday afternoons is to spend some time in the kitchen, cooking things to see me through the week at work and some sweet treats for my housemates as well. This weekend I was able to do just that, all whilst keeping an eye on the cricket scores!

Recipe: Banana and Walnut Loaf

They did some filming at my house last week and we were left with a large pile of very ripe bananas, which I assume were used as set dressing for the scenes in the kitchen. We had been using them in smoothies but they hadn’t gotten so ripe that even putting them in smoothies wasn’t appetising anymore! So banana and walnut loaf came to the rescue instead!

This is a super simple recipe that takes about 15 minutes to whip up, and about 55 minutes in the oven.
