Recipe: Simple Spring Pasta

I don’t cook a whole lot of pasta meals, but when I do I like to keep them as simple as possible with just a handful of fresh vegetables and no heavy sauce. This is a perfect example of that, it doesn’t involve much work but it is full of delicious flavours – just what you need for a quick meal on a warm Spring night!

Recipe: Mushroom & Spinach Macaroni and Cheese

Mushrooms appear in my veggie box with somewhat regularity and I always find ways to use them by adding them to pasta sauces, throwing them in stir-fries or curries or cooking them up for breakfast (which is B’s favourite way to eat them!). I rarely make them the star of the dish though, so when I got a large bag full of little button mushrooms in my last veggie box delivery I decided it was time to change all that, and went hunting for a mushroom focused recipe to try out!

Recipe: Spinach and Goat’s Cheese Risotto

Late last week I had a huge craving for risotto and realised I hadn’t made any in months, so set about changing that quick smart. I like to keep mine simple on the ingredient front (but not on the flavour front!) so went with spinach and goat’s cheese, and it definitely hit the mark!
