I was looking for ideas to take to a vegan potluck recently when I stumbled across this vegan potato salad and knew I had to make it. The sauce looked so creamy it was hard to believe it was vegan, and it was even more delicious than I had even hoped. I found myself with a stash of coconut milk and my mum’s homegrown potatoes that needed using so the logical response was to make vegetarian massaman curry! It’s always been one of my favourite dishes to order from Thai restaurants and it turns out it is just as delicious when made at home!

Recipe: Ginger Garlic Tofu Stir Fry

This ginger garlic tofu stir fry is one of my go-to quick and easy dinner options so I thought it was about time I shared it with you all too! I make stir fries fairly often as they are such are excellent option for using up pretty much any veggies I might have on hand, plus they take no time at all so I can have dinner on the table no matter how little enthusiasm for cooking I might have that night!

One of the most difficult times as a vegetarian is big family feasts like Christmas when the table is piled with sides and salads, but the main dish is usually meat – in times like this I turn to stuffed vegetables and these stuffed zucchini are my new favourite. If you haven’t tried stuffing a zucchini yet then you definitely should!
