I’ve been going through a wrap phase for work lunches lately, and these cauliflower kimchi fritters have been a big part of that. They’re seriously delicious, excellent to prep on a Sunday and make for an excellent wrap filling. I highly recommend you give them a try!
Recipe: Rhubarb & Strawberry Chia Jam
I’ve only made jam a couple of times in my life because I find the whole process a little time consuming, not to mention all the sugar it tends to use! I’d seen lots of talk of chia jam around and thought it was about time I tried some for myself, and it was so quick & easy as well as delicious! I highly recommend you giving my rhubarb & strawberry chia jam a try, you won’t regret it!
Recipe: Matcha Chia Pudding
Matcha isn’t a flavour I’m overly familiar with, although I did eat a fair few matcha flavoured goodies when I was in Japan a few years ago (matcha kit-kats anyone?!), however when a friend of mine started a company selling matcha powder (called Matcha Maiden, what a fab name!) I knew I needed to buy a bag and have a play. I started by adding it to my morning smoothies (yum!) and then got a little more creative with this matcha chia pudding!
Recipe: Layered Vegan Breakfast
I’ve been on the green smoothie bandwagon for a while now, and although I still love them I thought it was time to try something different for my weekday breakfast. I love anything that can be prepared in advance as whilst I’m somewhat of a morning person, I like to be as efficient as possible, particularly when it comes to breakfast. I had seen different types of layered breakfasts on instagram and pinterest so decided to have a go at making up my own combination!
