This roast beetroot, apple & haloumi salad really feels like winter on a plate! It’s somehow simultaneously both hearty and fresh, and it sure is delicious. Sure, it takes a little time to make, but it’s mainly hands off and so worth it!

I was given the new Karen Martini cookbook for my birthday & the recipe for these silverbeet haloumi pies grabbed my attention immediately! I do love anything with haloumi and these hit the spot, fast becoming a go-to for weekend lunches. You can even freeze them for later!
I’m not a huge fan of sandwiches for work lunches and now that fresh salads aren’t hitting the spot quite so much I gave this zucchini haloumi slice a go and oh boy was it tasty! It’s filling, delicious and so easy to whip up, I think it’s going to become a staple in my kitchen!
My love for haloumi is well documented and so this haloumi brown rice salad has quickly become a favourite for work lunches and potluck dinners. It’s quick and easy to whip up, fresh and filling and oh-so-delicious!
My love of haloumi knows no bounds so it should come as no surprise that I absolutely love these zucchini haloumi fritters! They’re super easy to whip up, (mostly) healthy, and ready in no time, making them perfect pretty much any time of the day!
