I felt like a particularly hearty and warming dinner recently and this mushroom bourguignon was the answer. It’s an excellent cold weather option, reheats well and is suitable for vegans too! Back in January a friend hosted an Italian-themed dinner party for his birthday and I brought along this eggplant caponata dish. It is tangy and delicious, and made a great counterpoint to the rich cheese and carb-heavy dishes on offer. Plus, it was super simple to whip up which was ultra important as I made it whilst simultaneously packing up my kitchen!

I love hearty, filling soups and this kale barley soup is an absolute winner. It’s like a minestrone with an added boost of kale. It’s filling enough to work for dinner – especially when served with some crusty bread – and reheats oh so well. Basically, it’s a winner all round!
