For the final instalment of my Canberra Eating series I thought I would share the very last place we ate at – Au Lac Royal Vegetarian in Dickson. Au Lac does vegetarian versions of all your Vietnamese favourites, with everything from stir fries to curries, dumplings, soups and more.

Soup season is definitely upon us! This minted pea and potato soup can be on the table in under half an hour, making it a perfect mid week dinner option served with some crusty bread, or a delicious weekend lunch. The potatoes make it super creamy without even needing to add any actual cream, making it kinder on our winter waistlines too!

This pumpkin sage pasta might not win any awards for originality but what it lacks in inventiveness it definitely makes up for with flavour! It’s an excellent mid week Autumn meal as it’s hearty and delicious but also ready in no time at all. It really is Autumn is a bowl!
Recipe: Lentil Stuffed Capsicum
Stuffed vegetables are often my go-to for meals where lots of sides and salads were being served and everyone else is having some kind of meat. They are hearty and warming, but also easy to prepare in advance, making them an excellent mid-week winter meal idea. This time around I’ve gone for a lentil stuffed capsicum, and it sure is delicious!
Canberra Eating: Akiba
After our afternoon at Bentspoke Brewery we went looking for somewhere for dinner and luckily were able to get a table outside at Akiba, which was obviously a popular spot for a Saturday night feed! Akiba does modern Asian food and is matched by an impressive drinks list including some very tasty cocktails (which we only sampled two of!).
