I spent a lot of Easter out at my parents place, and we needed a salad to take to an Easter lunch. Mum and I always like making something new, and this artichoke spelt salad was an excellent option. Delicious but easy to make – what more could we want!
For Mother’s Day my mum wanted a home cooked lunch, but didn’t want anything too extravagant. I decided a pea leek tart was the answer, and it turned out a treat. It’s actually quite simple too, not to mention delicious!
I’ve been all about hearty meals lately and this caramelised onion & spinach pasta bake has been a real winner. Taking the time to caramelise the onions really makes all the difference, and thankfully you can prep it all in advance as well. I pack the dish with as much spinach as I possibly can, then I don’t feel bad about the inclusion of mozzarella too!
