Welcome back to regular programming here at ISPP HQ! I hope the holiday period treated you well and that 2016 has started well for you. I had a lovely little break with family & friends and I’m feeling somewhat refreshed and ready to face the year ahead!
I went out for tacos before Christmas and one of the vegetarian versions came with pineapple salsa. It was so delicious that I knew I had to have a play in the kitchen and make some for myself! It’s sweet, savoury and mighty tasty!
Happy Australia Day (and Meatless Monday linkup day!) everyone!
With all the warm weather we’ve been having this summer it’s been imperative to have my freezer stocked with icy poles, and after making the berry mint combo multiple times it was time to mix things up a bit! I thought a double flavour combination was in order so these bad boys have a pineapple-lime base and a watermelon-mint top, but that’s a bit of a mouthful so we’ll just call them Watermelon Pineapple Icy Poles shall we!

As the weather started to warm up my mind started ticking over with all the delicious summer foods I want to make this year. I don’t eat a whole lot of dairy and coconut milk ice cream tends to be rather pricy to buy, so an ice cream maker had gone to the top of my Christmas wishlist.
I’ve been drinking nut milks for a year or two now, but I’d never gotten around to making my own. I decided that it was time to rectify this by making my first ever batch of cashew milk, and let me tell you I’m very sad I hadn’t tried it earlier – not only was it super simple to make but oh boy was it delicious. So so creamy.
