I was given the new Karen Martini cookbook for my birthday & the recipe for these silverbeet haloumi pies grabbed my attention immediately! I do love anything with haloumi and these hit the spot, fast becoming a go-to for weekend lunches. You can even freeze them for later!
Before starting my new job I decided to stock the freezer with meals for when I’m too tired to cook and this pumpkin silverbeet curry has been a real winner. It’s delicious, easy to whip up and reheats excellently. Present Liz is very happy with Past Liz, that’s for sure!
Silverbeet and I have had an interesting past – we ate a lot of it when I was growing up because it was always growing in my mum’s veggie patch, however I never really liked it all that much. I guess that’s not surprising as leafy greens aren’t normally kids favourite food! I had a bit of a sneaky habit of picking silverbeet from the garden and feeding it to our guinea pigs to try and avoid eating it again for dinner! Luckily those days are long behind me and I actually enjoy eating it now – no guinea pigs required!
