I felt like a rice dish for dinner recently, and the end result was this vegetable pilaf with onions and greens. It’s super simple, and packed with both veggies and flavour. Suitable for vegans too, which is always excellent in my books.
Surprisingly enough I haven’t really cooked any pasta this whole time in quarantine! These ricotta spinach stuffed pasta shells were an excellent way to end that though. A combo of both delicious tomato sauce and a creamy, cheesy sauce – what more could you want? So good!
I don’t make quiches very often, but had a hankering for one recently so got cooking. The result was this asparagus edamame quiche and it’s delicious! Spring-like, tasty and super simple to whip up. It’s perfect for work lunches, picnics and even a light dinner. So good! (more…)
