Recipe: Matcha Overnight Oats

I shared a photo of these matcha overnight oats on my instagram one morning and a few of you lovely folk got in touch asking for the recipe, so here we go! I’m a big fan of overnight oats as they make such a quick and easy breakfast option, and they are so versatile that you can top them with anything you have on hand. Yum, yum, yum!

Matcha Overnight Oats | I Spy Plum Pie

I tend to mix up two days worth in a go and it keeps absolutely fine in the fridge, but I do add the yoghurt and fruit fresh each day. This recipe will make one serve, so if you do want to make more in one go then just double or triple it!

Ingredients List

  • 1/2 cup oats
  • 1tsp matcha powder
  • 1tbs chia seeds
  • 1tsp cinnamon
  • 1tsp vanilla
  • 3/4 cup milk (I use almond milk)
  • Greek yoghurt and fruit for adding on top

Steps

  1. Mix together the oats, matcha, chia and cinnamon
  2. Add the vanilla and milk and stir well to combine
  3. Cover and refrigerate overnight
  4. Stir well in the morning then top with yoghurt and fruit
  5. Enjoy!

If you prefer your oats a little more on the runny side then just up the milk to roughly a cup, as the chia seeds do really soak up a lot of the liquid. I’ve been mixing up the fruits I top my matcha overnight oats with – blueberries, kiwifruit, apple, banana are all some of my favourites. Whatever you have on hand works! These oats make such a healthy & delicious breakfast option, so if you’re not on board the overnight oats train then I do recommend you give them a try!

I’m loving playing around with the matcha powder and exploring all kinds of ways to use it (other than adding it to my smoothies which is my go-to!). I buy my powder from Matcha Maiden, which was started by a close friend of mine, and their website has lots of great recipe ideas too if you’re in need of inspiration.

    This looks yummy. I usually have overnight oats for breakfast but I haven’t thought of using matcha and yeah, I think it’s best to have matcha! Thanks for this!!
