Over the Easter break we spent a few days in Beechworth on our way between Canberra and Melbourne and managed to squeeze in some excellent dinners. I thought I would share the places we ate in case you’re on the look out for some excellent vegetarian food in Beechworth!
Recipe: Corn, Zucchini and Chickpea Fritters
When I was unpacking things into my new pantry I discovered I had a surplus of cans of chickpeas and corn so knew I needed to add them into my meal plan ASAP. These corn, zucchini and chickpea fritters were a delicious solution to my problem! Simple, tasty and perfect for a quick and healthy dinner. Yum!
Recipe: Sticky Maple Soy Tofu and Vegetables
For me it’s hard to beat dishes like this sticky, delicious maple soy tofu and vegetables for dinner. It’s not only full of flavour, but it’s somehow both comforting and healthy, plus simple to pull together. Perfect for a mid-week meal and suitable for vegans as well!
London Eating: Mildreds Dalston
I made a flying visit to London to kick off my recent European adventures and dinner at Mildreds was a definite highlight. I visited their Dalston venue for dinner with my sister, some friends of ours and their adorable twin toddlers and thankfully we were sharing as there were too many options to just pick one!
Recipe: Garlic Paprika Cauliflower Steaks
I’ve been seeing images of cauliflower steaks online for ages now, so decided it was time to see what the fuss was about. I whipped up these garlic paprika cauliflower steaks for dinner one night and they were as good as I had hoped. So easy to make, they’ve fast become mid-week dinner staples for me!
