My mum and I celebrate our birthdays a couple of days apart, and after not getting to celebrate at all last year we were determined to do something lovely this year. Lunch in the Yarra Valley seemed like an excellent idea, and we settled on Many Hands Winery as our venue of choice. We were very glad we did!
Recipe: Zucchini Tomato Slice
I got a bounty of zucchinis from mum’s veggie patch recently so needed a delicious way to use them. This zucchini tomato slice was an absolute winning choice and made for the perfect work lunch too!
Recipe: Vegetable Pilaf with Onions and Greens
I felt like a rice dish for dinner recently, and the end result was this vegetable pilaf with onions and greens. It’s super simple, and packed with both veggies and flavour. Suitable for vegans too, which is always excellent in my books.
Recipe: Bean and Spinach Burgers
I love whipping up burger patties that I can have on hand for lunches and dinners. These bean and spinach burgers are an excellent option – simple to make, lots of flavour and baked in the oven. So good!
Recipe: Curried Vegetable Hand Pies
One weekend recently I wanted to pack my freezer with quick and easy lunch options for work-from-home lunches. These curried vegetable hand pies were the result and they’ve been keeping me happy for a little while now! It’s super easy to whip up a batch, and they’re seriously tasty!
