Recipe: Orange and Hazelnut Salad

I was recently given some oranges from a friends tree and after using a lot of them in juices I decided I should be a bit more creative with the remainder of the oranges. Given my love of salads it seemed an obvious choice, and I decided to bulk it out with some fresh, crisp green beans and the addition of roast hazelnuts. Recipe: Potato Rosti

These potato rostis work equally as well as part of a weekend brunch as they do as an easy lunch or dinner. For brunch they are an excellent complement to some poached eggs and avocado and for dinner I serve them with a big green salad – talk about versatile! You can even make them a little in advance and just reheat them in the oven on a low temperature, so you don’t have to worry about timing if you are doing a brunch cook up for a few people. The hardest part is decided how to eat it!

Recipe: Choc-Cranberry Oat Cookies

Since participating in the Sweet Adventures Blog Hop by making white chocolate and macadamia cookies I have been thinking about cookies a lot, so had to make some more! If you don’t have (or like) cranberries you could use sultanas or apricot instead, but I personally think the cranberries work extra well with the dark chocolate.

Recipe: Rice Salad with Lemony Avocado

The beauty of this salad is in its simplicity, it really is just a huge variety of fresh veggies tossed through some brown rice and all tied together with some lemony avocado. Easy – definitely. Tasty – you bet! It’s the kind of salad I feel healthier after eating, there’s something about eating the rainbow that just feels right! And when it’s delicious and easy to throw together all the better!
