Welcome to 2019! For my first recipes of the year I thought I’d share some of the food we whipped up for Christmas day, starting with this whole roast cauliflower with chickpeas and cranberries. It was oh-so-tasty, simple and would make an excellent feature dish for any upcoming dinner parties!
Recipe: Brussels Sprout and Sweet Potato Israeli Couscous Salad
I’m one of those slightly odd people that still loves salads in winter, and this brussels sprout and sweet potato number is perfect for that! Plus, it has my forever favourite salad base – israeli couscous! Roasted veggies, nuts, cranberries – what more could you want!
Recipe: Date Fudge Slice
I’m not going to lie, this slice is not the prettiest thing I’ve ever shared here on the blog, but it sure is tasty! This gooey date fudge slice is deceptively healthy, it’s free from flour and added sugar and is both vegan and gluten free. It might be slightly messy to eat, but it’s worth it, I promise!
Recipe: Orange Pecan Granola
This is one of the times I wish we had improved technology to the point that you could share scents through the computer because this orange pecan granola smells amazing! I’ve been having a regular sourdough-avocado-eggs breakfast for a little while now but with the return of sunny, warmer weather I decided it was time to have something a bit lighter and homemade granola was just the ticket!
