Recipe: Miso Eggplant

Miso eggplant is one of my go-to dishes to order when I’m at a Japanese restaurant, but it’s also super quick and easy to whip up at home too! Recipe: Miso Sesame Greens

This recipe is all about the dressing – a tangy, salty, delicious concoction that works equally well on a salad as it does a stir-fry, or as I have used it here to dress up some simple steamed greens. The best part is it can be whipped up in mere minutes so you can have dinner on the table in a flash on those nights where slaving over the stove just doesn’t seem appealing. Perfect!
