It had been a long time since I had whipped up a risotto, so I decided to rectify that recently. This pesto risotto was the result and it was vibrant, delicious and so simple to make. Perfect to make on a Sunday and have leftovers waiting for you for Meatfree Monday!
We were on salad duty for Christmas this year, which is always ok with me! We decided to make salads we hadn’t tried before which thankfully worked out very well – last week I shared the delicious nectarine, haloumi & pomegranate salad we made. Our other contribution was this fennel apple and cabbage slaw and it will likely be on high rotation this summer – fresh, crunchy and oh so delicious.
I didn’t think there were still new ways I could enjoy the combo of sweet potato and chickpeas, but turns out I was wrong! This sweet potato and harissa chickpea salad is seriously delicious – not to mention hearty and simple to whip up!
I love soup for lunch when the weather gets cooler, but I always found it an annoying thing to take to work to reheat. Given I’m still working from home a bit it’s the perfect time to add more soup to my rotation and this roasted capsicum and fennel soup is delicious. Packed with flavour but super simple to make!
This pomegranate pistachio israeli couscous salad is seriously simple, but also seriously tasty. It’s ready in no time at all, making it perfect as part of a lunch with friends or to take to a picnic. It’s vegan friendly too!
