Freekeh is one of those ingredients that seemingly burst onto menus out of nowhere, and whilst I have eaten it out a few times I had never actually cooked with it. When I came across some at the market during our weekend in Daylesford I knew I needed to bring some home with me, and its first use is in this asparagus freekeh salad!
With Spring in the air and delicious produce in the fruit & veggie shop I’m all about simple dinners that really allow the veggies to really be the star of the dish. I find risottos really fit this bill and today’s zucchini & pea risotto is a perfect example!

I love that we can control both the types and amount of toppings we use and customise them to be exactly how we want them. Anyone that knows me knows I am a massive AFL fan, to a rather ridiculous point. After the success of my lentil bolognese I thought it was time to vegetarianise (that’s definitely not a word…) another classic with these meatless meatballs! Made with the goodness of mushrooms and packed with fresh herbs they may not quite have the texture of regular meatballs but they sure are tasty!
