I’m a big fan of risottos (here are some of my favourites!) so they show up on my meal plan somewhat regularly. This pumpkin mushroom risotto is my current favourite. Vegan friendly, packed with flavour and reheats well too. What more could you ask for!
I love a risotto in the colder months, but I don’t always want to spend lots of time preparing all the different elements. Plus, at the moment it can be tricky to know what fresh produce you are going to get your hands on! This simple beetroot risotto is perfect for that! Plus, it’s pretty and delicious!
This sun-dried tomato spinach risotto is an excellent winter dinner that is started on the stove and finished in the oven. It’s hearty and warming, full of flavour and surprisingly simple to make. It can be made vegan friendly as well!
I’ve always been a fan of risotto, but it’s safe to say I haven’t always been a fan of Brussels sprouts. I took a while for me to recover from the over-cooked version I was served by my grandparents, that’s for sure. This Brussels sprout risotto is a much better way to serve them! It’s hearty, warming and a perfect winter dinner.
I don’t make risotto all that often but whenever I do I’m reminded how much I like it, and this sweet potato zucchini risotto is no different! It takes a little effort to make, but it’s well worth it and reheats really well. I tend to make a big risotto on a Sunday and then have dinner sorted for the next couple of nights – perfect!
