Tempeh is not something I cook with too often, but I have a feeling these tempeh lettuce cups will be showing up on my summer menu a lot this year. Not only are they incredibly delicious, but they’re also super healthy & ready in no time. Perfect!
Recipe: Pea, Mint & Goats Cheese Salad
I’m trying to make the most of the gorgeous fresh summer produce while it’s still around and this salad is a prime example of that. It uses not one but three different kinds of peas and the dressing, whilst being simple, still manages pack a delicious flavour punch. It’s the ideal summer salad for a BBQ!
