Recipe: Pea & Asparagus Israeli Couscous Salad

Israeli couscous is by far one of my favourite salad bases as it provides not only flavour but some texture as well. Plus, it’s really easy to prepare and tastes as good both hot and cold! I whipped up this pea & asparagus israeli couscous salad to take to a BBQ and wanted to cram as many delicious Spring greens in there as I possibly could!

Recipe: Baked Tofu Vermicelli Salad

The recent burst of sunshine we’ve experienced in Melbourne has made me long for light, fresh meals and this baked tofu vermicelli salad was just the ticket! Full of colour, texture and flavour, it’s ready in no time and super healthy, not to mention delicious! It’s my new favourite lunch option and despite being on been on high rotation here at ISPP HQ I’m not even close to being sick of it!

Recipe: Sesame Soba Noodle Salad

I seem to be in a bit of a food pattern at the moment, rotating between various warming curries for dinner (this potato & pea one is on high rotation!), and fresh, noodle-based salads for lunch. I figure this way I’m getting all my food bases covered! This sesame soba noodle salad has been a firm favourite for work lunches, the flavours develop over time so it’s perfect for a day or two of leftovers, plus it’s super quick and easy to whip up!

Recipe: Pumpkin, Bean & Rice Salad

After playing around with black rice after first buying it (like with this salad!) it had snuck its way to the back of my pantry and I promptly forgot about it (which possibly says a lot about the state of my pantry!) until I was looking for something to make a side dish with and stumbled across it again! Of course, you could make this salad with brown rice if you’d prefer, but there’s something about the colour and slightly nutty flavour that I really like about black rice, so if you can get your hands on it I highly recommend giving it a try!
