Black beans are one of my pantry staples, I keep them on hand for quick Mexican dinners and healthy, delicious salads like this Mexican bean salad! I whipped up this for a BBQ at a friend’s place and it was gobbled up in no time. It’s super quick and easy to make and doesn’t even require turning on the oven which is always a win in summer. I recommend you give it a try!
The Foodie Files: Modern Day Missus
February is upon us so it’s time for the next instalment of my Foodie Files series! This month I chatted to the lovely Robyn from Modern Day Missus and I’m sure you’re going to love getting to know her a little more.
Eco Choice: Cork
Last year I shared the eco credentials of bamboo with you all, and today I wanted to zero in on another eco friendly material choice – cork! There’s more to cork than just wine bottle stoppers, I promise!
Recipe: Haloumi Pomegranate Salad
This haloumi pomegranate salad is similar to one I whipped up as part of our Christmas lunch, which was definitely well received! It takes very little cooking so it’s perfect for those summer nights that are far too hot to turn the oven or when you need something ready in a flash!
January Favourite Finds
And just like that it’s the end of the first month of 2016 and time for my January favourite finds! How has the start of 2016 treated you so far? My year has started pretty well, with lots of holiday planning which is always exciting. It’s been a while since I’ve had a proper, long holiday and this year all that is changing! So far I have a trip back to New Zealand on the cards, followed by 5 weeks in Europe for one of my best friend’s weddings. I can’t wait! If you have any tips for Budapest or Slovenia please do let me know!
