I was looking for something a bit healthier recently and this carrot walnut taco mince was the result. Not only is it seriously tasty, but it can be used in pretty much all your favourite Mexican dishes. So good!

Sandwiches aren’t something I take to work very often, but I had a weird craving for one recently. I knew I needed something super delicious and interesting for the filling, and this chickpea celery salad was the answer. Recipe: Eggplant Caponata

Back in January a friend hosted an Italian-themed dinner party for his birthday and I brought along this eggplant caponata dish. It is tangy and delicious, and made a great counterpoint to the rich cheese and carb-heavy dishes on offer. Plus, it was super simple to whip up which was ultra important as I made it whilst simultaneously packing up my kitchen!
