Sandwiches aren’t something I take to work very often, but I had a weird craving for one recently. I knew I needed something super delicious and interesting for the filling, and this chickpea celery salad was the answer. The only problem was it was so delicious I ate heaps of it before it even made it into my lunchbox! Thankfully it’s also super easy to make more!
After my magical time in Montenegro last year I got to explore a little of another country I had never been to before – Portugal! Back in January a friend hosted an Italian-themed dinner party for his birthday and I brought along this eggplant caponata dish. It is tangy and delicious, and made a great counterpoint to the rich cheese and carb-heavy dishes on offer. Plus, it was super simple to whip up which was ultra important as I made it whilst simultaneously packing up my kitchen!

I love a rice based salad and this asparagus bean rice salad is no exception. It’s hearty enough to take to work for lunches, whilst still being full of flavour and packed with greens. It is super simple to whip up too – seriously, what’s not to love.
