Sandwiches aren’t something I take to work very often, but I had a weird craving for one recently. I knew I needed something super delicious and interesting for the filling, and this chickpea celery salad was the answer. The only problem was it was so delicious I ate heaps of it before it even made it into my lunchbox! Thankfully it’s also super easy to make more!

After my magical time in Montenegro last year I got to explore a little of another country I had never been to before – Portugal! I’ve going to share some of my adventures with you over the next little while, starting with some of the exploring I did in Porto. Recipe: Eggplant Caponata
Back in January a friend hosted an Italian-themed dinner party for his birthday and I brought along this eggplant caponata dish. It is tangy and delicious, and made a great counterpoint to the rich cheese and carb-heavy dishes on offer. Plus, it was super simple to whip up which was ultra important as I made it whilst simultaneously packing up my kitchen!
