I needed to make something to take to work a little while back and this apple walnut loaf looked the perfect answer. It absolutely was! Easy to make, lots of flavour and an absolute crowd pleaser. I definitely recommend you give it a try!
I very slightly tweaked a recipe from Love Swah
Ingredients List
For the Loaf
- 1 cup brown sugar
- 120g softened butter
- 1 egg
- 2 apples
- 1 1/4 cups plain flour
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1tsp baking soda
- 1/2 cup walnuts
For the Streusel
- 1/4 cup walnuts
- 1/4 cup brown sugar
- 2tbs plain flour
- 1/2tsp cinnamon
- 2tbs melted butter
Steps
- Preheat oven to 180C and line a loaf tin
- Cream butter and sugar until light and fluffy
- Add the egg and beat to combine
- Dice the apples and stir though
- Sift in the flour, cinnamon, nutmeg and baking powder
- Roughly chop the walnuts and add to the bowl, then fold to combine all ingredients
- Spoon into the prepared pan
- In a small bowl combine the streusel ingredients and stir until combined and resemble a crumble
- Sprinkle on top of the loaf
- Bake for 40-45 minutes until a skewer comes out clean
- Cool in the pan, then transfer to a rack
That’s all there is to this apple walnut loaf! I find the streusel topping turns this into something that little bit fancier and more interesting, plus it adds some delicious crunch on top. It does mean it can be a little messy to eat, but it’s definitely worth it! How can you go wrong with the combination of apples and walnuts! I don’t bother to peel the apples either – it all gets so well baked that I find I don’t notice, so the extra step isn’t worth it to me.
I also love that this apple walnut loaf only makes a handful of dishes – no one wants to deal with a sink full after the baking is done! Most importantly though, the loaf was very well received in the office and it absolutely didn’t last long!
