I’m a big fan of risottos (here are some of my favourites!) so they show up on my meal plan somewhat regularly. This pumpkin mushroom risotto is my current favourite. Vegan friendly, packed with flavour and reheats well too. What more could you ask for!
This zucchini pea pasta dish is one of the easiest I have shared in all my years of blogging! It’s also one of my absolute go-to dishes when I want a super quick but also super tasty dinner. That makes it perfect for a mid-week meal as you can have it on the table in no time. It’s also an excellent way to use that pasta and frozen peas you might have on hand at the moment!
We spent a long weekend in Berry recently for my cousin’s wedding and whilst most of our time was spent on lovely wedding festivities we did have one dinner out in town. We booked in to Queen Street Eatery for dinner on our first night and I’m so glad we did. The food was excellent, the staff were friendly and the place itself was gorgeous!
I’ve been in a bit of a jackfruit cooking phase lately, so decided jackfruit tacos needed to be part of the mix. I love tacos, and I’m loving jackfruit, so it’s safe to say I definitely loved these jackfruit tacos! Plus, they are super simple to whip up too.
I’ve been on a bit of a fritter roll lately! These carrot ginger ricotta fritters are my new go-to and for good reason. They’re super tasty, super easy and super quick to make. Plus, you can whip the batter up in advance too! What more could you ask for?!
