I fancied a stuffed vegetable for dinner recently, and wanted to make sure it was both filling and delicious. This brown rice stuffed capsicum was the answer and they were excellent! I love that they are equally excellent for a mid-week dinner as they would be as part of a more fancy dinner spread!
